Having experienced the 3 year European model several years ago and worked with the young apprentices in Switzerland and Italy, I believe that there are things that can't be taught in prestigious 4 year programs in North America. The militant discipline, respect and work ethic that is modeled into the European system is taught from day 1, where education is immediately merged with hands on industry training. That in itself is what is truly missing. I used to get in trouble at the Culinary Institute for tellings some students to quit in their first month, because I knew they didn't have the skills.
